Snow Day Hot Cocoa for One

When I was pregnant, I drank this every single day for the second half of my pregnancy as a way to increase my calcium intake. I used the shelf stable Silk almond milk because it had the most calcium, plus it was super convenient to buy on Amazon. I’ve made this with coconut milk and regular old cow’s milk too, and they’re all delicious. 

The sugar level may be a bit low if you’re used to drinking powdered mixes, so taste at the end and adjust if needed (I actually drank this with half the amount of sugar when pregnant so to me, this is the perfect amount). It’s also meant to be a basic recipe. Add your own mix-ins like a sprinkle of cinnamon (looking at you, Pam Beesly), a dash of vanilla extract, even a candy cane!

So if you’re ever in a bind or get a taste for hot cocoa and you realize you’re out of Swiss Miss, crack open the pantry and make it from scratch!

Ingredients

  • 8 oz milk
  • 1 heaping tbsp cocoa powder
  • 1 tbsp sugar

Instructions

  • Heat milk on stovetop in a saucepan over medium heat until wisps of steam appear (or, heat in microwave for 1 ½ minutes).
  • Combine cocoa powder and sugar in a mug, and pour half of the hot milk over top.
  • Mix thoroughly, then add the rest of the milk. Stir once more. Taste and adjust sugar if needed.
  • Top with marshmallows, chocolate chips, or whipped cream.
